Is Sourdough Nature's Ozempic? Here's What's Actually True
It's everywhere right now. TikTok, Instagram, Facebook groups, people calling sourdough "nature's Ozempic". Some are fully convinced. Others are pushing back hard, calling it a fake claim. So who's right?
Well! There's genuine science behind the idea, and there's also genuine hype. Here's what's actually true, what's overstated, and what it means for the bread you choose to eat.
Genuine sourdough, made with a live wild yeast starter and slow-fermented several hours, does several things that regular bread simply cannot:
• Lower glycaemic index: Real sourdough produces a slower, steadier rise in blood sugar compared to standard white or even wholemeal bread. Less of a spike means less of a crash and fewer cravings shortly after eating.
• Appetite suppression: Fermentation produces short-chain fatty acids including acetate, which research suggests can signal fullness to the brain and suppress appetite between meals.
• Improved satiety: The organic acids produced during long fermentation slow gastric emptying, meaning food stays in your stomach longer, keeping you fuller.
• Better nutrient absorption: Phytic acid, an antinutrient in wheat, is broken down during fermentation, improving your body's ability to absorb minerals like iron, zinc and magnesium.
The honest caveat
Sourdough is not Ozempic. It will not produce dramatic weight loss on its own. The effects are real but modest — and they only apply to genuinely slow-fermented sourdough, not the supermarket versions made with commercial yeast and added acids. If the ingredients list anything other than flour, water and salt, the fermentation hasn't happened properly.
